I’ve been dying to make some kind of popsicles for quite a while now, but I have been waiting for the right recipe idea to strike… Then Suncore Foods launched their Premium Midori Jade Matcha Supercolor Powder and I knew it was time to bust out the popsicle mold I bought last summer (that I haven’t yet used). We’ve been having some pretty nice weather here in Ohio- so it was definitly Mother Nature pretty much begging me to make them asap!

These Avocado Banana Matcha Creamsicles are creamy and dreamy and represent all things summery. They are made with only 6 simple ingredients and other than needing to freeze before enjoying, they take about 5 minutes to blend and pour into your popsicle molds!

I’ve become quite smitten with matcha over the last year or so. It’s super trendy right now, and for reasons other than it makes the best warming, comforting frothy latte. As we head into the warmer months, I find myself drinking less warm beverages, naturally, but am not quite ready to pack my matcha powder away until the fall- so I started brainstorming on some summer friendly recipes. I am proud to report these super easy, super delicious Avocado Banana Matcha Creamsicles will defintly be stocked in my freezer this summer!

Description

A healthy frozen matcha treat! These creamsicles are naturally sweetened with bananas and maple syrup and are extra creamy from the avocado and coconut milk! Gluten-free and vegan.


Ingredients

Scale

  • 1 ripe avocado
  • 2 ripe bananas
  • 1 can (13.66 oz) full fat coconut milk
  • 2 tsp matcha powder, (I used Suncore Foods Midori Jade Matcha Supercolor Powder)
  • 2 tsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. **NOTE: These will need to freeze before enjoying
  2. In a blender, blend all ingredients together
  3. Pour into your popsicle mold, insert sticks and freeze until solid (I froze mine overnight)

Notes

** to get the marble-ish look, set aside a bit of coconut milk and pour a little bit of that in the mold separate from the avocado mixture
