It’s no secret that I love snack bites! They’re easy to make, they are so delicious, and I get to sneak in some pretty awesome superfoods. It’s a pretty close competition between my Almond Flour Chocolate Chip Cookie Dough Bites and my Almond Flour Date Cookie Dough Bars, they are both super popular recipes on the Healthy Little Vittles blog, so I decided to kinda combine the two recipes and make these Chocolate Peanut Butter Almond Flour Date Bites. Holy moly these are good!

Dates are an item I have on hand at all times in my house. We LOVE dates. A lot of nights when the kids ask for dessert after dinner, we grab the dates and fill them with chocolate tahini, or cashew/ peanut butter and they are the perfect treat to satisfy our sweet tooth in a healthy way.

These Chocolate Peanut Butter Almond Flour Date Bites are super easy to make and only require 6 ingredients- only 4 ingredients to make the actual bites, and then of course the chocolate to coat the cookie dough bites in. Let’s dive in!

Dates. You’ll need 1½ cups of pitted dates. I like to buy dates with the pits still in them, as I find they stay fresher that way.

Almond flour. I used super fine blanched almond flour. You can use unblanched if preferred.

Peanut butter. I used natural chunky peanut butter in this recipe that doesn’t have any added sugar or oils- just peanuts.

Chia seeds. You can use white or black chia seeds- I used black. You will need 1 tablespoon. I love adding superfood chia seeds for an added boost of nutrients like omega-3 fatty acids, protein, fiber.

Chocolate chips. For this recipe I used dairy-free, refined sugar free dark chocolate chips. You will need 1 cup.

Coconut oil. Coconut oil helps to keep the chocolate from cracking when it’s hard.

How to Make These Chocolate Peanut Butter Almond Flour Date Bites

Pit the dates if they still have the pits in them, then place the halves into a glass measuring cup/bowl and cover with water. Microwave for 2 minutes, then drain and add to a food processor.

Add the almond flour, peanut butter, and chia seeds to the food processor and pulse everything together until you achieve a cookie dough texture, and no large chunks of dates remain. Line a baking sheet with parchment paper. Using a tablespoon, roll into balls using about 1 tablespoon of the mixture per ball. Place on the baking sheet while you melt the chocolate.

Melt the chocolate chips and coconut oil together in a small-medium bowl in the microwave for about 1 minute.

Working with one at a time, roll each bite in the melted chocolate using a fork to fully cover it, tap the fork on the side of the bowl to remove any excess chocolate and then carefully place it back on the baking sheet. Once all of the bites are covered in chocolate, you can use the fork to drizzle any leftover chocolate over the truffles if desired. Place the bites in the fridge to chill for about 30 minutes, until the chocolate hardens. Keep them stored, covered, in the fridge for up to a week.

Allergy Friendly Version

If you have a peanut allergy, feel free to swap out the peanut butter for sunflower seed butter. Or if you have a nut (almond) allergy, you can make these bites with sunflower seed flour instead! I buy sunflower seed flour on Amazon, but you could also make your own at home by grinding raw sunflower seeds into a fine almond flour-like texture like I do in these Sunflower Seed Chocolate Brownie Bites.
