Originally, this Peanut Butter Ginger Lime Dressing was created to use in my Edamame Quinoa Salad, but it’s so delicious I wanted to let it shine and give this dressing it’s own dedicated recipe post! This recipe would also be great to use as a dip for spring rolls! Let’s dive in…

The Dressing Ingredients

Soy sauce. The base of this Asian-inspired dressing is soy sauce. This dressing recipe calls for 1/4 cup of gluten-free soy sauce (Tamari) or you can use Liquid Aminos.

Sesame oil. You will need 2 tablespoons of sesame oil.

Ginger. I purchased frozen ginger cubes for ease to use in this recipe. If you use fresh ginger, it would be equivalent to 1 teaspoon of ginger.

Lime juice. You need 2 tablespoons of lime juice. You may used fresh squeezed lime juice or you can use bottled lime juice (what I used), preferably NOT from concentrate.

Agave syrup. If you don’t want to use agave syrup you can use maple syrup instead. The recipe calls for 2 tablespoons of a natural sweetener.

Peanut butter. Creamy or chunky peanut butter is fine to use in this dressing recipe, however, try to buy natural peanut butter that doesn’t contain any sugar or palm oil. You will need 1/2 cup of peanut butter.

How To Make This Dressing/Sauce

This Peanut Butter Ginger Lime Dressing is so easy to whip up! Simply combine all of the dressing ingredients together in a food processor or blender and blend until smooth. Alternatively you can whisk the ingredients together in a bowl, but if you’re using a ginger cube I would suggest blending it. You can use a bullet blender or even an immersion blender will work.

Adaptations

Add water to thin to your desired consistency. This dressing/sauce is on the thicker side. I prefer thicker dressings and sauces, but if you would like to add water to thin to your liking, feel free to do so. I would add little bits at a time until you reach your desired consistency.

Swap the peanut butter for another nut/seed butter. The flavor profile will be different, but if you can’t have peanuts you can use cashew butter, almond butter, or even sunflower seed butter for an allergy-friendly version of this dressing.
