Description

An easy, healthy, and refreshing summer treat! These Pineapple Coconut Acai Chia Ice Pops are made with pineapple flavored coconut water, chia seeds, acai powder and agave syrup- that's it! Simply mix your ingredients together in about 5 minutes and chill until frozen. They also contain some pretty amazing health benefits, are gluten-free and vegan too!


Ingredients

  • 2 cups Pineapple Coconut Water
  • 1/4 cup raw white chia seeds
  • 1 tbsp Amethyst Açaí Berry Supercolor Powder, (from Suncore Foods)
  • 1 tbsp agave syrup

Instructions

    In a glass measuring cup, measure 2 cups of pineapple coconut water. Warm the coconut water in the microwave for 1 minute (alternatively you can do this stovetop). Stir in the agave syrup, until it disolves. Whisk in the Açaí Berry Supercolor Powder and then whisk in the chia seeds.

    Let the mixture sit on your counter for about 15-20 minutes, whisking frequently to avoid the chia seeds sinking to the bottom. The mixture will be ready to pour into your popsicle molds when the chia seeds gel up and no longer sink to the bottom.

    Place your popsicle molds on a baking sheet, then pour the mixture evenly into your popsicle mold. I used this popsicle mold. Place into the freezer until firm, preferrably overnight and enjoy!
