Ingredients
Chia Pudding
- 1 cup chia seeds, (I used black chia seeds from Suncore Foods)
- 2 & 1/4 cup almond milk
- 2 tsp vanilla extract
- 4 tbsp maple syrup
Raspberry/Strawberry Nice Cream
- 2 frozen bananas
- 1/4–1/2 cup frozen raspberries/strawberries, (depending on how flavorful/red you want your nice cream)
- 1–2 tbsp almond milk
- 1 tsp vanilla extract
Blue Butterfly Pea Flower Nice Cream
- 2 frozen bananas
- 1 tbsp blue butterfly pea flower powder, (from Suncore Foods)
- 1–2 tbsp almond milk
- 1 tsp vanilla extract
Toppings
- strawberries
- raspberries
- blueberries
- pomegranate seeds, (optional)
Instructions
** A DAY BEFORE YOU PLAN ON MAKING THESE, freeze 4 bananas overnight and make your chia pudding the night before.
Chia Pudding
Make your chia pudding the night before for the ease. Whisk together all pudding ingredients, leave out on the counter for a few minutes and then whisk again. Cover and store in the fridge for at least 2 hours or overnight.
NOTE: you will probably have extra chia pudding leftover from this recipe, but then you can get 2 breakfasts out of one! Woohoo!
Raspberry/Strawberry Nice Cream
Add your frozen bananas, frozen berries, vanilla, and almond milk to a high speed blender or food processor and blend until you achieve an ice cream-like consistency. You may have to stop and stir and re-blend to get the bananas fully blended.
NOTE: add the almond milk little bits at a time. If you add too little it won't become smooth enough, and if you add too much you'll end up with a smoothie!
Split them between 2 glasses and store in the freezer while you make the blue butterfly pea flower nice cream.

Take your glasses out of the freezer, top the berry layer of nice cream with chia pudding, then top with blue butterfly pea flower nice cream and fresh berries!
