Blueberry Oatmeal French Toast Sticks

Ahh… French Toast Sticks… what a nostalgic breakfast from my childhood. The modern day me longs for these kinds of sweet indulgent breakfast recipes, except healthier, so I decided to create a gluten-free, vegan, naturally sweetened, high-fiber version of a favorite growing up while still bringing all the comfort brekkie feels.

You’ll start by combining Gluten Free Organic Old Fashioned Rolled Oats from Bob’s Red Mill with fresh blueberries, cinnamon, cardamom, chia seeds, plant milk, maple syrup, banana, vanilla, and nut/seed butter then baking it in the oven for about 30 minutes. Cool the baked oatmeal and then slice into sticks.

The oatmeal can also be made the night before for a quicker morning breakfast routine, and actually I preferred doing this as the oatmeal was able to set up just a bit more. Then you’ll cook the French toast sticks on a nonstick griddle/skillet in a little bit of vegan butter/coconut oil until they brown and crisp on the outside, just like you would with traditional French Toast Sticks!

Why enjoy this baked oatmeal as French Toast Sticks? Well, for one- it’s fun! I mean, who doesn’t love French Toast Sticks?! Two, it’s a great way to get more fiber into your diet! Between Bob Red Mill’s Gluten Free Organic Old Fashioned Rolled Oats and the other fiber-rich plant-based ingredients you’re getting a great serving of fiber and plant-based protein! Three- it changes up the habitual bowl of oatmeal in a fabulous new way, besides, the kids just love them! It’s also a great way to sneak more fiber and plant-based protein to their diets as well #winning! Need I go on? My go-to for many products I use is from Bob’s Red Mill, particularly their Gluten Free Organic Old Fashioned Rolled Oats. To ensure they’re suitable for those with celiac or a gluten intolerance, their oats are handled in their dedicated gluten-free facility and tested in their laboratory to verify they meet their strict standards which gives me confidence they are free from gluten and possible cross contamination. The American is so deficient in fiber so I’ve been trying to be more intentional about including higher fiber foods into my diet whenever I can. There are even parts of the world, mostly undeveloped countries that have such a high-fiber intake there is no signs of chronic disease like we see here in America! Oats are a great source of soluble fiber, which can help keep your digestive system on track and may prevent the risk of certain chronic diseases- and what a fun way to include more fiber with these Blueberry Oatmeal French Toast Sticks!

Ingredients

Units Scale
  • 2 chia eggs (2 tablespoons chia seeds + 5 tablespoons water)
  • 2 cups Bob’s Red Mill Organic Old Fashioned Rolled Oats
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • pinch salt
  • 1/2 cup banana, mashed
  • 1 cup plant milk (I used oat milk)
  • 1/2 cup nut/seed butter (I used almond butter)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup maple syrup (optional)
  • 1 cup fresh blueberries
  • 2 tablespoons vegan butter/coconut oil
  • maple syrup

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a small bowl, make the chia eggs first by combining the chia seeds and water and stirring frequently until they “gel” up and the water is absorbed.
  3. Meanwhile, add the oats, cinnamon, cardamom, and salt to a large bowl and stir to combine.
  4. Mash the banana with a fork in a bowl and add it to the bowl with the oats along with the plant milk of choice, nut/seed butter of choice, vanilla, the chia eggs and maple syrup if using. Stir until well combined.
  5. Gently fold in the blueberries then place into a parchment-line 7×11 baking dish. Alternatively you may use an 8×8 or 9×13 baking dish but the sticks will end up being thicker or thinner.
  6. Bake in the oven for 30 minutes. Let the oatmeal cool completely before slicing into sticks. I recommend making this the night before and allowing it to cool in your fridge.
  7. Using the parchment paper, gently lift the baked oatmeal out of the baking dish and place it onto a large cutting board. Slice the baked oatmeal into 12 pieces.
  8. Heat an electric griddle or large skillet over medium high heat. Melt vegan butter or coconut oil then add the oatmeal slices and cook them just like you would french toast, flipping them to all four sides until they are golden and crispy on the outsides. Serve with maple syrup.
  9. Refrigerate or freeze any leftover sticks. To reheat frozen french toast sticks it is preferred you bake them in the oven or air fry them but you may also microwave them if in a hurry.

  1. Since I „discovered“ this recipe about 2 weeks ago, I have done it at least 4 times. I freeze it to have a healthy snack in the afternoon. Actually I have never tried it with blueberries, but plums, pears and my favourite apple with apricots. The best combo. The sweetness of the apple and the sourness of the apricot is genius.
