These Chocolate Chip Cookie Dough Stuffed Dates are stuffed with naturally sweetened, raw, edible, almond flour chocolate chip cookie dough. These snack bites are the perfect sweet treat to bring to all your festive parties or keep on hand when the sweet tooth hits!

My family and I often reach for a date after dinner when we are craving something sweet for dessert. Sometimes we’ll stuff our dates with peanut butter or chocolate tahini, but this time I decided to take my raw, edible, vegan, gluten-free Almond Flour Chocolate Chip Cookie Dough Bites and instead of rolling the cookie dough into balls, I stuffed it inside of dates! Mind. Blown. Pass me another please! 😋

Cookie Dough Ingredients

The cookie dough only requires 6 ingredients and is edible in less than 10 minutes! Boom.

Almond flour. In this cookie dough recipe I’m using blanched almond flour. You can used unblanched also but your cookie dough will just come out a darker. You get all the benefits of almonds in this sweet treat while ditching the worries from eating raw dough.

Peanut butter. The peanut butter adds a healthy, sticky protein boost to hold the dough together without the use of butter.

Vanilla. Make sure to use pure vanilla extract.

Maple syrup. Using maple syrup adds the perfect natural sweetness to this cookie dough.

Salt. Helps to balance the sweetness.

Chocolate chips. I love to use mini chocolate chips (affiliate link) in my cookie dough, but you can use any dairy-free chocolate chips.

How To Make Stuffed Dates

Start with the freshest, large medjool dates you can find. I prefer to buy dates that still have the pits in them as I have found that they are softer and fresher.

Slice open and remove the pits from your dates (if you didn’t purchase pitted dates). In a medium bowl, stir together all cookie dough ingredients until a dough forms. Spoon the cookie dough generously into the dates. Place in the fridge to set up for about 10 minutes and then transfer to a covered dish and keep in the fridge until ready to serve.

Recipe Tips/Variations

I suggest you buy dates that still have the pits, I find them to be a little softer. It’s kind of tedious to remove all the pits, but if that’s what takes the longest in this recipe, I’m ok with that. If you find pitted dates that don’t look too dry, go for it… bonus!

If you want to drizzle melted chocolate over these Chocolate Chip Cookie Dough Stuffed Dates, you can! I find these are perfectly delicious without it, but if you’re a chocolate lover, go for it 😉

If you have an almond or peanut sensitivity, feel free to use another nut or seed flour instead of almond flour and swap out the peanut butter for another nut/seed butter, such as sunflower seed butter.

Ingredients

  2. These look heavenly!! I’d love to give it a try but I’d like to replace almond flour with coconut flour as that’s all I have right now. I also realize their properties are different. How much coconut flour do you think I’ll have to use to replace almond flour and what other changes will have to be made? Thank you
