Have I introduced you to my newest obsession yet? Say hello to my new-old friend, Chia Pudding. I’m not sure if it’s the fact that I’m about ready to pop and my pregnancy cravings are in full swing (baby please come any day now!) or the fact that chia seeds are so dang fun, healthy, and versitile that I’ve just been so obsessed with them lately. Now I’ve had my fair share of chia puddings in the past, and I sort of forgot about them up until recently, but this White Chocolate Pear Chia Pudding takes my chia game to a whole new level.

This was my first time ever using fruit in the recipe as opposed to just garnishing with fruit on top of the recipe, so I was super pumped to kick it up with the PEAR-fect addition of vegan white chocolate and green anjou pears from USA Pears!
Side note: did you know there are 10 different kinds of pears?!

So, how did I choose just the right pears for this White Chocolate Pear Chia Pudding? Well I certainly love anjou pears for their vibrant green color, and knew it would look amazing PEARED with the green ombré idea I had in mind for this pudding. Now obviously the pear itself isn’t green so I added some matcha powder to this recipe as well (surprise!) to really enhance those layers and it actually partnered very nicely with the white chocolate and pear flavors. I mean, as if this chia pudding could get any cooler! Let’s take a closer peek at the ingredients in these delicious White Chocolate Pear Chia Puddings:

☆ vegan white chocolate
☆ matcha powder
☆ almond milk
☆ pure almond extract

That’s it! Only 6-ingredients and 20 minutes (plus chilling time) required for this delectable dessert!

Now the ombré look isn’t as complicated as it may seem, but you can certainly leave out the matcha and have straight up white chocolate pear chia pudding and it’s just as delicious. I’ll leave that part up to you, but if you’re looking to wow your guests, it only takes an extra minute really.

White Chocolate Pear Chia Pudding

Ingredients

Units Scale

  • 1 pear, peeled and diced
  • 3 cups unsweetened almond milk, divided
  • 3/4 cup white chia seeds, divided
  • 3/4 tsp pure almond extract, divided
  • 3/4 cup vegan white chocolate, divided, (I used Kind David White Chocolate Coins)
  • 2.5 tsp matcha powder, divided

Optional

  • 1 pear for garnishing
  • vegan white chocolate for garnishing

Instructions

  1. **NOTE: Make this dessert the night before or at least an hour prior to serving to allow the chia pudding to “gel up”
  2. In a small saucepan, add 1 cup of almond milk, 1/4 cup of vegan white chocolate, 1/4 cup diced and peeled pear, and 1/4 tsp pure almond extract and bring to a low simmer (until all the white chocolate is melted)
  3. Transfer the mixture to a blender and blend until smooth
  4. Pour the white chocolate pear mixture and 1/4 cup of chia seeds to a glass bowl with a lid or mason jar, shake and then place in the fridge
  5. Now you’re going to repeat this process two more times.
  6. In the same small saucepan, add 1 cup of almond milk, 1/4 cup of vegan white chocolate, 1/4 cup diced and peeled pear, and 1/4 tsp pure almond extract and bring to a low simmer (until all the white chocolate is melted). ** Also add in 1/2 tsp of matcha powder to this batch
  7. Transfer the mixture to a blender and blend until smooth. Pour this mixture to another glass bowl with lid or mason jar, add 1/4 cup of chia seeds, shake and then place in the fridge
  8. Repeat a third time, this time adding 1.5 tsp of matcha powder to the saucepan, blend, pour into a third glass bowl with lid or mason jar, add 1/4 cup of chia seeds, shake, and add to the fridge with the other two
  9. To assemble, spoon out some of each pudding and layer in glasses and top with fresh pear and additional white chocolate, if desired. Store leftovers in the fridge
